It’s a Wrap for Veganuary as a Welsh NHS nurse’s winning plant-based Beyond Burrito recipe bags her an all-expenses luxury weekend away and ‘money can’t buy’ cooking experience with everyone’s favourite flexitarian Peter Andre. The prize was part of Beyond Meat’s #FirstStepBeyond contest supported by Veganuary, which was designed to help people take a first step to going plant-based for Veganuary, gained more than 2 million views and thousands of entries across the UK.

The winning recipe was chosen by Pete and a panel of judges and belonged to critical care nurse Jemma Evans, aged 32, who works at Grange University and Royal Gwent Hospital, Newport and has put in five 12 hour shifts most weeks for the last five years, including all of lockdown.

Jemma’s job involves caring and making decisions for the most poorly of patients. Even when travelling to London to experience her prize, Jemma displayed her dedication to the care of others by rushing to help a passenger who had unexpectedly fainted and fallen on the railway line at Newport station.

Last week, Dad of four Pete, 49, whose wife Emily is an NHS doctor, 33, spoke out to praise nurses for their ‘incredible service’, saying we should consider ourselves lucky for having access to such ‘stellar healthcare’.

Peter Andre said: “Congratulations to a very deserving winner Jemma. We so appreciate the amazing work you do for the NHS and the recipe was incredible. Good job chef! Well done to everyone who took their First Step Beyond this Veganuary. We hope the delicious plant-based Beyond Meat products made it easy to swap the animal meat out of your meals.”

During Jemma’s stay at five-star apartment One Denman Place, London, Peter and Jemma made her winning plant-based burrito together, with Peter sharing his experience of cooking Beyond Meat – which is designed to have the same taste and texture as animal meat but is actually made of plants – and Jemma teaching Peter the correct technique for wrapping a burrito!

Jemma Evans said: “My Beyond Burrito recipe is great for anyone who works long shifts. It’s important I can make quick nutritious meals at home that keep me going. Using Beyond Mince in the recipe is cost-effective too and great for both meat eaters and flexitarians because it makes you feel like you don’t miss meat. I picked the recipe as it’s a fave with my flexi friends at my dinner parties. It gets everyone involved, it’s super relaxed and people can alter how spicy they like it! I love Beyond Meat as it’s packed with protein, allowing me to eat similar meals with friends so I never miss out.”

Later, Peter serenaded the NHS nurse with a new song from his upcoming album release and they cosied up for a Saturday night burrito in front of the apartment lounge’s widescreen TV, after dipping their burri-toes, in the jacuzzi.
